The initiative allows staff and students to order their very own box of locally sourced, organic produce every week for \u00a36 per 4kg \u2013 which is a <em>lot <\/em>of veg. I don\u2019t personally cook with vegetables like squash, beetroot, or even potatoes all that often. So, to support the Veg Box Project and also you, who may buy a box and be left with some items that you just don\u2019t know how to use, we\u2019re releasing this new series \u2013 Veg Box Bakes! In which I, your humble blog post writer, shows you how to use vegetables in a new way.<\/p>\n\n\n\n<p>This week, we\u2019re starting with the white potatoes, because that seems easy and also because I saw a recipe online last week that I wanted to try but didn\u2019t have the potatoes for until collecting my veg. The cornstarch is used to help the potato form a dough-like consistency<\/em><\/figcaption><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><br>METHOD:<\/h4>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li>Peel and dice your potatoes. Then boil in salted water until soft and easily pierced with a fork.<\/li>\n\n\n\n<li>Transfer the potatoes to a bowl and mash well.<\/li>\n\n\n\n<li>Stir in sugar and cornstarch.<\/li>\n\n\n\n<li>Separate the mixture into fifths and roll into a ball.<\/li>\n\n\n\n<li>Flatten the ball and add a handful of cheese; then close it back up and shape the potato into a disc.<\/li>\n\n\n\n<li>Shallow fry the potato discs for about 5 minutes on either side until golden brown.<\/li>\n<\/ol>\n\n\n\n<p>For extra flavour, why not add finely chopped spring onions, chives or steamed kale to the mash?<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"699\" src=\"https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2-1024x699.jpg\" alt=\"\" class=\"wp-image-16366\" srcset=\"https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2-1024x699.jpg 1024w, https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2-300x205.jpg 300w, https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2-768x524.jpg 768w, https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2-1536x1049.jpg 1536w, https:\/\/blogs.canterbury.ac.uk\/sustainability\/wp-content\/uploads\/sites\/669\/2023\/01\/IMG_3681-2.jpg 2048w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><figcaption class=\"wp-element-caption\"><em>Image description: the potato discs shallow frying in a fry pan; you want to turn them over when they&#8217;re golden brown on one side.
