#LivingWell – Easy Peasy Pea Soup.

Soup is the perfect comfort food. Its warm, soothing and easy to make. Made with ingredients that you may already have in your cupboard, fridge and freezer, this soup is easy to make, easy to store and lovely to eat!

What you will need:

  • 1 tbsp olive oil
  • 1 garlic clove
  • ½ onion
  • 200g frozen peas
  • 300ml stock (this could be chicken or vegetable, based on own preference)
  • 50ml double cream
  • salt and pepper to taste


Firstly, chop the garlic and the onion into small chunks. Heat the oil in a saucepan over a medium heat.

Add the onion and garlic and fry for 3–4 minutes, until softened.

Next, add the frozen peas and stock, then bring to the boil. Reduce the heat and simmer for ten minutes.

Add the cream and use a hand blender make the soup into a smooth texture. Season, to taste and serve.

Add a little extra:

Got left over ham, bacon or gammon in the fridge? Cook it off and add into the soup after blending for another level of flavour.

To store:

It is safe for up to 3-5 days in the fridge in an airtight container or pour into freezer-safe containers and freeze. Once frozen, it is safe for up to a year.
