Eating the rainbow | why we should be getting Vitamin C
Vitamin C, also known as ascorbic acid, has several important functions. It is best known for helping our immunity but it also plays a vital role in protecting cells, maintaining healthy skin, blood vessels, bones and cartilages as well as helping with wound healing. A lack of Vitamin C can lead to conditions such as scurvy and in some cases it can cause fatigue and depression.
To avoid getting a deficiency it is recommended we have 40mg of Vitamin C a day.
Foods containing Vitamin C
- Citrus fruits such as oranges, lemons and limes
- Broccoli and Cauliflower
little tip – Vitamin C helps to absorb iron from foods, when cooking iron rich meals such as lentils, add an ingredient rich in vitamin C such as tomatoes to maximise the nutrients power you get from your meal. It also makes iron consumption gentler on the stomach.
